She is very much ‘onside’ with having freedom of food choices. Your letters don’t have to be long, just convey the thought that you want freedom of choice. It was raved about and she received a few requests to post this recipe, so here it is:&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Pumpkin Spice Cake&lt;/span&gt;:&lt;br /&gt;&lt;br /&gt;1 cup vegetable oil&lt;br /&gt;3 eggs&lt;br /&gt;1 can pumpkin -- (15 ounce)&lt;br /&gt;puree&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;2 1/2 cups white sugar&lt;br /&gt;2 1/2 cups all-purpose flour&lt;br /&gt;&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;1 teaspoon ground nutmeg&lt;br /&gt;1 teaspoon ground allspice&lt;br /&gt;1 teaspoon ground cinnamon&lt;br /&gt;1 teaspoon ground cloves&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;1/2 cup chopped walnuts&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees F (175 degrees C). Grease one 10 inch bundt or tube pan.&lt;br /&gt;&lt;br /&gt;Cream oil, beaten eggs, pumpkin and vanilla together.&lt;br /&gt;&lt;br /&gt;Sift the flour, sugar, baking soda, ground nutmeg, ground allspice, ground cinnamon, ground cloves and salt together. Add the flour mixture to the pumpkin mixture and mix until just combined. If desired, stir in some chopped nuts. Pour batter into the prepared pan.&lt;br /&gt;&lt;br /&gt;Bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick inserted in the middle comes out clean. Drop by teaspoonfuls on top of the rhubarb mixture. I took a look through my canning book and found a fairly easy Peach Salsa. Yes, that was the perfect recipe to get rid of a few more of those babies.&lt;br /&gt;Here's the recipe if you'd like to try it:&lt;br /&gt;&lt;br /&gt;6 cups prepared peaches (about 6 large peaches)&lt;br /&gt;1 1/4 cups chopped red onion&lt;br /&gt;2 jalapeno peppers, finely chopped&lt;br /&gt;1 red pepper, chopped&lt;br /&gt;1/2 cup finely chopped cilantro&lt;br /&gt;1/2 cup white vinegar&lt;br /&gt;2 tbsp liquid honey&lt;br /&gt;1 clove garlic, finely chopped&lt;br /&gt;1 1/2 tsp ground cumin&lt;br /&gt;1/2 tsp cayenne pepper&lt;br /&gt;&lt;br /&gt;Blanch, peel, pit and chop peaches; measure 6 cups. combine peaches, onion, peppers, cilantro, vinegar, honey, garlic, cumin and cayenne pepper in a large stainless steel saucepan. Bring to a boil, stirring constantly to prevent scorching. Boil gently, stirring frequently, for 5 minutes. Remove from heat.&lt;br /&gt;Ladle hot salsa into hot jars to within 1/2 inch of top rim. Using nonmetallic utensil, remove air bubbles. Wipe jar rim removing any stickiness. Bring to boil.&lt;br /&gt;&lt;br /&gt;In hot, sterilized quart jars, place dill and garlic cloves with a small amount of hot brine into jar. Fill with small cucumbers to within 1 inch of top. &lt;br /&gt;Pour hot brine over cucumbers to within 1/4 inch of top. Seal. makes 1 quart.&lt;br /&gt;&lt;br /&gt;For additional jars, just multiply amount of brine for jars to be filled. Let stand 4 weeks before serving. &lt;br /&gt;&lt;br /&gt;*********&lt;br /&gt;&lt;br /&gt;Chard Relish:&lt;br /&gt;&lt;br /&gt;10 cups Swiss Chard, stalks only, diced&lt;br /&gt;1/4 cup coarse pickling salt&lt;br /&gt;2 medium onions, diced&lt;br /&gt;2 cups white vinegar&lt;br /&gt;2 cups sugar&lt;br /&gt;1 1/2 tsp celery seed&lt;br /&gt;1/2 tsp mustard seed&lt;br /&gt;&lt;br /&gt;Sauce:&lt;br /&gt;1/4 cup conrstarch&lt;br /&gt;1 tsp Mustard powder&lt;br /&gt;1/2 tsp Turmeric&lt;br /&gt;1/2 tsp Curry powder&lt;br /&gt;1/4 cup water&lt;br /&gt;&lt;br /&gt;Place chard in large pot. Sprinkle with salt. Let stand 2 hours.&lt;br /&gt;Stir in onion. Let stand 1/2 hour. Drain well.&lt;br /&gt;Add vinegar, sugar, celery seed and mustard seed. Bring to boil, stirring often. Cook for about 30 minutes, stirring occasionally, until tender. &lt;br /&gt;Sauce: In small bowl combine cornstarch, mustard powder, turmeric and curry powder. Stir in water and mix til smooth. Stir into chard misture. Boil for 10 minutes more, stirring often. Fill hot sterilized jars to within 1/4 inch of top. Seal. So, here's the recipe for you all to try:&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1 recipe &lt;a href="http://simplyrecipes.com/recipes/all_butter_crust_for_sweet_and_savory_pies_pate_brisee/" target="_blank"&gt;pate brisee pie crust&lt;/a&gt; &lt;br /&gt;1/4 cup packed brown sugar&lt;br /&gt;2 teaspoons flour&lt;br /&gt;1/8 teaspoon ground cardamom&lt;br /&gt;1/8 teaspoon ground chipotle chile powder or plain chile powder&lt;br /&gt;1 pound pitted and halved fresh apricots&lt;br /&gt;1/4 cup raisins&lt;br /&gt;2 Tbsp chopped pecans&lt;br /&gt;Method&lt;br /&gt;&lt;br /&gt;1. In a medium bowl, mix the sugar, flour, cardamom and chipotle chile powder. Fold in the apricot halves and raisins, until they are well coated with the mixture. Set aside and let macerate for 10 minutes.&lt;br /&gt;&lt;br /&gt;2. If you are working with chilled pie dough, remove from the refrigerator to let stand for 10 minutes before rolling out.&lt;br /&gt;&lt;br /&gt;3. Lightly flour a clean surface and roll out the pie dough to a 13-inch round of even thickness.&lt;br /&gt;&lt;br /&gt;4. If you are cooking on the grill, transfer the rolled-out pie dough to a large, lightly buttered, doubled over square of aluminum foil. If you are baking in the oven, transfer to small-rimmed, lightly buttered baking sheet.&lt;br /&gt;5. Place the apricot mixture in the center of the pie dough round, leaving a border of 2 inches on all sides. Sprinkle the top with the chopped pecans. Fold the edges of the pie crust up and over so that a small circle of filling is visible.&lt;br /&gt;&lt;br /&gt;6a. Grilling Directions.&lt;br /&gt;Prepare grill (either charcoal or gas) for indirect medium heat. Carefully transfer the tart on foil to the grill. Make sure it isn't directly over any coals or gas flame. Cover the grill. If your grill has a temperature gauge, try to keep the temp between 350°F and 400°F. Cook for 40-50 minutes, until crust is lightly browned and the filling is bubbly.&lt;br /&gt;&lt;br /&gt;6b. Oven Directions.&lt;br /&gt;Preheat oven to 350°F. (this can also be done with a mortar and pestle, but who needs the extra work..) and pulse til everything is chopped up. Slowly drizzle Olive Oil into feeder and let it whirl til you have a fairly smooth, thick sauce. Add grated Parmesan and Salt and Pepper to taste and you are finished. Combine flour, cinnamon, salt &amp; baking soda; add to sugar mixture alternatly with milk. Beat until smooth. Stir in Rhubarb &amp; ground Almonds. Pour into greased 9-inch springform cake pan. For topping, combine sugar &amp; butter; stir in almonds. Sprinkle over batter.
